Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup (125g) cornstarch
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Vegetable oil for frying

For the orange sauce:

  • 1/2 cup (120ml) orange juice
  • Zest of 1 orange
  • 1/4 cup (60ml) soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Optional garnish:

  • Green onions, thinly sliced
  • Sesame seeds

Instructions:

  • In a bowl, season the chicken pieces with salt and pepper.
  • Place the cornstarch in a shallow dish. Dip each chicken piece into the beaten eggs, then coat with the cornstarch, shaking off any excess.
  • Heat vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the chicken in batches and fry until golden brown and crispy, about 4-5 minutes per side. Transfer the cooked chicken to a plate lined with paper towels to drain excess oil.
